DVD Giveaway

It was one of my favorite movies of 2007, and I have a brand-new DVD copy of it to give away.

Disney's Enchanted is a magical fairytale about a cartoon princess lost in New York City. I found it to be absolutely enchanting, especially the career-making performance of Amy Adams.

If you'd like to have Enchanted on DVD, just leave a comment on this post. I need picnic ideas for the 4th of July. What are some of your favorite quick summer recipes?

My most favorite summer picnic recipe is for chicken salad sandwiches. What you'll need:
1) 1 lb of skinless chicken breasts (boneless; saves time later)OH and about 5 eggs (boiled)
2) 1 stock of celery
3) 1 can cosher dill pickles
4) about 1 cup mayonaise
5) salt and pepper for taste
6) bread (wheat of white; your preference)

prep time: 1:30 hours

what to do:

boil chicken, but dont forget to add some salt while boiling. While chicken boils; prepair celery and pickles by chopping. set aside. When chicken and eggs are done, shread all chicken (when cooled), chop up cooled eggs after boiled. Mix all ingredients together and spread over bread. Cut into triangles if you want...and wala...the perfect picnic sandwich that will go with anything you desire.

This salad is great for summer parties:

Tortellini Caesar Salad

1 pkg. (9 oz) cheese tortellini
1/2 C mayo
1/4 C milk
1/4 C plus 1/3 C shredded Parmesan, divided
2 tbl lemon juice
2 garlic cloves, minced
8 C torn Romaine lettuce
1 C seasoned croutons
halved cherry tomatoes

Cook tortellini according to pkg directions. In small bowl combine mayo, milk, 1/4 C Parmesan, lemon juice, garlic- mix well. Drain tortellini and rinse in cool water. Place in large bowl. Add Romaine and remaining Parmesan. Just before serving drizzle with the dressing from small bowl and toss to coat. Top with croutons and tomatoes.

um....watermelon.....what 4th of July is complete without watermelon?....then have a seed spitin' contest with your kids....somehow that could be science...how far can the seed go? does a bigger seed go farther? unless you take the summer off, then just have fun spittin' the seeds

This isn't so much a picnic recipe as a summer tip, but my kids LOVE the popsicles you make yourself in the freezer. You can use juice, lemonade, instant chocolate pudding, yogurt--just about anything! The yogurt and pudding ones are nice because you know they're getting their calcium.

A picnic calls for a visit to KFC. Make a pitcher of fresh lemonade and and a boxed brownie mix for dessert.

I love fresh strawberry pie.

ready made crust - precooked
6 cups strawberries divided
Put 5 of the 6 cups into the pie use the rest in a glaze

the glaze: crust straweberries, add 1/2c water, 3tablespoons of cornstarch, 1 cup sugar and stir until boiling then boil for one minute. Take off heat, add 1/2tsp vanilla and 1/4 tsp salt. Let sit for 10 minutes then pour over the strawberries. Let chill and voila'! It's great, for real! I serve with redi-whip.

BERRY BERRY COBBLER

4-6 Cups Berries
6 Tablespoons Butter (melted)
2 teaspoons Baking Powder
½ teaspoon Salt
1 ½ Cups Sugar
2 Cups Flour
1 Cups Milk

Lay berries evenly on 9”x13” pan. Mix ingredients pour over berries.

In a separate bowl mix

1 Cup Sugar
Dash Salt
2 Tablespoons Corn Starch

Sprinkle evenly over batter; add 1 Cup boiling water over entire cobbler.
Bake at 350 for 1 hour.

This is my favorite dessert with fresh summer berries. Blackberries and blueberries work great. Strawberries taste fine, but don't look as good. Raspberries are a little tart. This also works very well a la mode.

I like to make kidney bean salad but I don't use a recipe so I'm just guessing on the amounts. Just open and drain a can of light kidney beans. Put into a bowl and add about 1/4 C. diced mild onion, 2 T. sweet pickly relish, a good couple of shakes of celery seed, and 1 diced up hard-boiled egg. Add enough Miracle Whip to bind it all together, less is better than more as it seems to get moister as it sits. Refrigerate well and enjoy.

to me you can't beat jut plain sandwiches for a picnic.
peanut butter and jelly, Ham and cheese and of course potato chips and kool-aid.
but don't forget the kick ball and frisbee and other games that really make the picnic fun.

What I do is take food orders for who ever will be there at the Fourth of July Picnic. You take on idea from each person coming. So you would ask your kids to pick one thing they really want and then go to the next person. If you get to many ideas of the same then say Aunts have to pick side dishes etc. Put this all in a folder and save for every year and look for the bst recipes. I call it Pullum Traditions Folder.

Of course you cant go wrong with little triangle sarnies with thinly sliced cucumber.... oh my its sooooooooo british LMFAO....

But our favourite is big crusty baguettes stuffed to overflowing with king prawns with chilli mayo and fresh watercress......

ok now Im hungry lol...

If I won, which I wont, but if I do, could you kindly sent the DVD to the Toadie kids :).....

I like to make pasta salad with tri-color rotini and Italian dressing. Then add any or all of the following:
tomatoes
onion
green or red peppers
banana peppers
pepperoni
ham
shredded cheese
velveeta cubes
black beans
corn

Easy, fast, no recipe needed!

For a great picnic lunch I love to make sandwiches. But I bring along a small cooler with all the fixings in it and let everyone make their own. Lunch meats, mayo, several veggie toppings, peanut butter and jelly too. Potatoe salad, chips, pop, juice, and you're all set!

I love the movie and I love this summer recipe!
I can live off of Ambrosia during the summertime. I can eat it for breakfast, lunch or even dinner. It falls in the healthy category since it's fruits but it falls in the yummy category because we add mini marshmallows, maraschino cherries and coconut!

I love this recipe, it always goes so fast, people love it.

Low Fat Taco Dip

1 8oz Brick of low fat cream cheese
1 large container of low fat cottage cheese
1 one package of taco seasoning (any brand is fine)
3 tablespoons of either fresh or dried minced onions

Combine all of this together and spread it out in a casserole dish.
Top with shredded lettuce, chopped black olives, low fat shredded cheddar cheese or jack cheese and chopped tomatoes.

Serve with either regular tortilla chips or baked tortilla chips…

Yum…guaranteed to disappear!

Summer is the only time I make iced tea because I can just fill a glass jar with water, put in a few tea bags and set it on the porch in the sun for a few hours. Add ice and sugar if you want and enjoy. Happy 4th!

You can buy frozen, breaded chicken tenders and bake them. Then serve with BBQ sauce and sweet and sour sace for dipping.
